What is Tallow and Lard?
Tallow and lard are a purified liquid extraction of ruminant animals suet (fat) that surrounds the animals’ organs.
Tallow is the rendered fat from cattle, and lard is the rendered fat from pigs.
The historical use of Tallow and Lard in our ancestry
Rendered animal fat goes as far back as dated human history, being a staple in the prosperity and longevity of humanity throughout evolution.
Our Ancestors related with these animals and used their fats for food as medicine, soap making, candle lighting, leather protecting, skin moisturizing, perfume making, and even to aid various skin diseases.
From the First Nation Peoples of North America and Inuit Peoples of the Arctic, who relied and in fact worshiped these animals as they were a core food for their survival and with the stable shelf life of the oil, it could provide food for them in the harshness of winter.
As well as across the world to the Romans and ancient Egyptians, and many other cultures in between have been recorded using this medicinal food throughout history.
Why animal fats are highly nutritious, safe and clean to consume:
Rendered animal fats have a high smoking point of nearly 400 degrees F / 200 degrees C, making them the best oil to cook with safely in high temperatures.
We render the fat using traditional methods with low heat for a long period of time, tending to maintain and extract the richness of the oil and making this minimally processed and essentially pure.
Animal fats are rich in fatty acids and omegas which are responsible for nutrient absorption, immune function, brain and other organ function, cell signaling, energy storage and much more.
Fatty acids form lipids that closely resemble the composition of our skin, making it the most penetrable and breathable form of oil to use as a moisturizer.
Rich in antioxidants with anti inflammatory essential fatty acid CLA ( Conjugated Linoleic Acid ) studies have presented that moderate consumption of pasture raised animal fat help prevent skin, breast, lung and stomach cancers. As well as reduce high blood pressure.
Contains essential vitamins such as A and E (supporting healthy skin, teeth and eyesight), D and K (supporting bone health).
Contains an anti-microbial agent called palmitoleic acid.
Tallow is supple with the nutrient choline which is supporting the nervous system and the fatty acids within animal fats participate in the formation of myelin which is responsible for protecting the neuronal pathways in our brain.
What is regenerative farming, and why should we support it?
Regenerative agriculture is beyond organic. It is a wholistic approach that takes accountability with every act we do to mimic nature’s intelligent system of cycling nutrients, retaining and purifying water, storing carbon in the soil, enhancing oxygen in the atmosphere, and encouraging life and biodiversity within the ecosystem we relate with.
This way of farming benefits the health of our bodies, the land, water, air, and the life forms that call this terrain home.
